1kg well washed potatoes
1kg eating apples
1kg onions
500gms streaky bacon or bacon
pieces
500ml good flavoured stock
Using the
slicing blade of a food processor slice, but keep separate, the
potatoes, apples and onions. Take the rind off the bacon and cut into
2-3cm strips. Make alternating layers of all the ingredients in an
earthenware casserole, finishing with a layer of potato. Season well and
cover with stock - you may need to adjust the amount of liquid to cover
the other ingredients. Cover with greaseproof paper and put in a
moderate oven for 2-3 hours. Remove the paper half an hour before the
end and allow the top layer to brown and crisp.
