The Chicken supplied by Swaddles Organic is reared to the very highest organic standards. All our poultry are fed on organic feed-certified by the Soil Association, reared in small batches of 250 chicks; housed in small field arks in groups of 150 or less and fed and watered outside-so that the birds actually do go outside!

Storage instructions: ALWAYS remove bird from plastic bag, remove bag of giblets and put in a cold refrigerator on a plate, covered loosely with greaseproof paper or a clean tea towel. NEVER store in the plastic bag. If the bird is intended for freezing, remove giblets (this makes for more thorough defrosting), re-bag and freeze on day of delivery.

Cooking Chicken: Swaddles chickens have led a longer, far more active life than other chickens and so benefit from slightly longer, slower cooking. Allow 65 min/kg in a moderate oven - 190OC. Season the bird well with salt and freshly ground pepper and place a bunch of fresh herbs and a lemon in the cavity before roasting. For nicely crispy skin rub all over with sea salt before cooking.

Cooking Duck: Cook for 25 min/kg at 200OC with 10 minutes extra. The legs may need detaching and cooking for a further 10 minutes. Try rubbing course sea salt, black pepper and mixed spice for a sweet and delicious taste.
